Protein Pancakes

About the Recipe

I have been making protein pancakes since I was in high school. During college at Mississippi State, I would make protein pancakes for myself every Saturday morning after a workout or run. It was my ritual! Although I have never used a recipe for pancakes, I have decided to at least try to compile the ingredients that I always use with the relatively accurate measurements. That is the great thing about cooking and baking. Once you have done it for a while and know the science behind it, recipes are just suggestions! I hope every one enjoys these pancakes as much as me! Ingredients

  • Protein Powder (2 scoops) (I use vanilla or BPN Blueberry muffin flavor)

  • 1 Cup Oat Flour (almond or coconut flour)

  • 1 tsp vanilla extract

  • 1/2 tsp baking soda

  • Dash of salt

  • 2 Eggs

  • 1 old, mashed banana

  • 1-2 TBSP milk

  • Optional: chocolate chips or blueberries


Preparation

Step 1


Add all dry ingredients to a large bowl and mix.



Step 2


Once combined, add in egg, extract, mashed banana, and milk. Mix throughly until combined



Step 3


Add optional chocolate chips or blueberry to the batter once batter is already combined. Fold into batter.



Step 4


Warm skillet on stovetop to medium heat. Add oil. Ladle batter on the the oiled pan and cook on both sides until no longer liquid. Add butter, honey, or maple syrup and enjoy!!
